Banana Bread Pudding and a Long Run

Let's cut to the chase... since once again, I SHOULD be doing homework and am instead writing a blogpost, because the things I made this morning was really, really good.

It was pudding...or maybe more like soft serve ice cream....or a super thick smoothie (you decide!) but it had the taste of banana bread. Really. I kid you not. EXACTLY like it... and then that added cold, frozen dreamy creaminess that 'banana soft-serve' has, for those of you who have just blended up frozen bananas know.

I STRONGLY recommend this. I think it may be my favorite thing I've made thus far! Sweet, refreshing, fruity, and really... banana bready :)

BANANA BREAD FROZEN PUDDING
1 frozen banana
1/3 cup almond milk
1/8 cup rolled oats, ground in food processer to powder
Dash Cinnamon
Dash Nutmeg

OPTIONAL TOPPINGS:
Coconut Flakes
Chocolate Chips
Chopped Almonds
Peanut Butter
Caramel Sauce



  1. Put everything into your blender and blend on high until you get a creamy, soft-serve ice cream/pudding consistency.
  2. Top with whatever your little heart desires. I went with coconut flakes (overcoming my fear of saturated fats!) and some cocoa roasted almonds, which were awesome because a little bit of chocolate got in there in the almond bites but I also got the plain-banana bread taste in others, which I LOVED. ENJOY!

 At practice today we got the pleasure of getting in a long run. I love long runs, because you can really let loose and get the acid out of your muscles but still get in a bit of a workout. I find that my mind really clears up and I start to get in touch with my body more and more as the run goes on. Plus, you can talk with your teammates! We played a little game in which we speculated where all the people we knew would be in 10 years. It's funny, but according to us, it seems that we will all be doctors or physical therapists or physchologists. That tells you a bit about the kind of girls on our team, haha....fun-loving but also loving. And smart. I love my team. They are always there for me. Plus, when I shared the embarrassing fact that yes, I started a blog, no one laughed. They were very interested in learning how to make a smoothie taste like banana bread, I'll say that!

Why Everyone Should Love Speedwork

I'm anticipating another Uber-busy week coming up. School will take off as normal, I assume, and I'm going to have to drag myself out of bed and get moving each morning in order to make it to the bus stop and through 3 hours of classes before the next real break for lunch. So of course, I need to be extra prepared with a filling breakfast that can carry me through!

Before I share my (hopefully) delicious new recipe, let's talk about speed work. Duh duh duh.... I know. If you're strictly a distance runner like me, the very phrase brings chills to your spine. To be honest, despite the title of this post, I don't love speedwork. I actually kind of loathe it...but just a little less than I did before.

You see, I had to face a grueling set of speed drills this morning at 8:00 AM, which is either a really good thing or a really bad thing depending on how you spin in. If you want to look at it negatively...it was 8 in the morning on Labor Day and I would really have preferred to be snuggled down in my warm bed, head buried deep in my yummy-scented pillow. If you want to put a positive spin on it, though... the fact that it was 8 meant that my mind hadn't completely woken up to figure out what the heck I was doing to it yet, so I got in maybe 200 meters before I had a mental breakdown. Hey. That's 200 meters more than last time, so I'm happy.

But the long and short of it is: speedwork DOES help you. It can't be denied (I've looked for a way. No go) The reason speedwork helps improve performance is it literally 'creates' a different energy-usage pathway in our muscles so we can burn through glycogen more efficiently. That means increased metabolism, people!

In more detail, our body only has so much accessible glucose at any given time, and this gets quickly used up in short sprints through Anaerobic Respiration. However, longer, sustained workouts activate Aerobic Respiration, in which the body has to use available oxygen for conversions. The more we build our Anaerobic pathway, the more we can prolong the time that the body starts Aerobic Respiration, and the more we can burn through any excesses of glycogen (essentially, sugar). So it helps our body out! Yea speedwork! (I'm not cheering, either, don't worry. I still do not love it, and probably never will.)

But let's get on to something I do love. Like food. Like maybe... FROYO!! Or even better...
CHOCOLATE BANANA PROTEIN FROYO
Okay... with some chopped espresso beans too :)
1 ripe banana, mashed
8 oz Fat Free Plain Greek Yogurt (could use vanilla or honey, also)
1-2 T. Dark Chocolate Cocoa Powder
1 Packet Sweetener (optional)
2 T. Chopped Coffee Beans (optional)

Banana

Banana and Yogurt

Everything!

AND FREEZE!
  1. Combine all ingredients and stir well. Place in freezer for at least 1 hour. Take out and thaw for a few minutes, stirring up or putting in blender to obtain soft-serve consistency. ENJOY!
Nutritional Information for ENTIRE RECIPE: 250 calories, 1.5 g fat, 24g protein, 33g carbohydrate, 4 g fiber

Running Shoe Shopping

If there is one thing that I love to buy, it would have to be shoes. Flats, converse... and of course, running shoes. I love the bright colors, testing out the soles, trying to figure out all the new technology. But somehow today, despite all the wonderful options available, I did the only thing a girl could do: go with the classic. I'm an Asiacs girl. I think the past 5 or 6 pairs I've owned have all been Asiacs! This time, though, I actually ended up with the exact same pair. Yupp. THE EXACT SAME: color, size, design, model... the only difference of course, was that I hadn't been wearing them! I figured it was a new season, so it was probably time to get a new pair, but I couldn't help feeling a little foolish. Why was I dishing out another $90 to get something I already had? I don't know... oh well. I trust these shoes. They've been like old friends, carrying me through hard workouts and hikes and rainstorms and adventures in the woods...and I definitely just used a run-on sentence. Once again: oh well.

I sadly haven't had a whole lot of time in the kitchen due to school starting up again (technically I really should be studying right now for a test in AP Bio...on the second full day of school no less!) so no new recipes to report. I did, however, whip up something a little yummy quite some time ago which I brought up on Averie's site here. Pumpkin peanut butter. Maybe it sounds like a strange combination, but I think it's heaven. A great fall twist on an old classic at the very least! Here's the super easy recipe:

Sarah's Pumpkin Pie Peanut Butter
1/3 cup canned pumpkin
1.5 Tablespoons Peanut Butter
1/2 teaspoon vanilla extract
Dash Pumpkin Pie Spice
1-2 teaspoons raisins
1-2 teaspoons chopped walnuts or pecans
2 teaspoons almond milk
Sweetener to taste (I don't use any)
*Optional- a handful of cacao nibs or chocolate chips :)

Simply stir everything together and keep in the fridge. Serve on sandwiches, with graham crackers, apples, bananas, celery, bread, on oatmeal....whatever your heart desires. Or even eat it with a spoon, because it is THAT good. Especially with the chocolate. Shhh. I won't tell anyone.

I've really been into pumpkin lately, in case you haven't noticed. In fact, I ate it with every meal today! (pumpkin oatmeal, pumpkin pb sandwich, pumpkin burgers, pumpkin pie banana protein shake...the list didn't end!) Something about it just warms you from inside out, though. And I needed some motivation at practice today. We ran 800 reps with medicine balls/agility ladders/strength in between each. And we increased the speed by 10 seconds with each round. We only did 3 800s total, but of course we had the 15 minute warmup run and all of that strength, so in the heat it made for a pretty tough workout. Plus, I had conditioning in gym, and I worked HARD with lunges and on the weight resistance machines. I'm going to get MUSCLES this year (my goal, at least....)

The Daily Grind

School, you shall be taking over my life for the next 10 months. I submit. With 4 APs, a couple of clubs, and afterschool sports, I officially have no life again.

SO WHY THE HECK AM I WRITING A BLOG POST?!!

It's a good question. And I have really no idea. Basically, since it's just the first day, we don't have any homework yet, so I figured this would be one of the last opportunities I would have to make a longish post of any kind. Not that I have anything life-shattering to share today... I was sitting in a seat for 6 hours after all!

I woke up late this morning, due to an alarm clock that decided NOT to go off at 6:00AM. My bus supposedly comes at 6:52, and when do I wake up (no thanks to YOU, unhelpful alarm clock)? 6:45. I panicked, of course, because that seems to be what I do best, but because I had already packed my bag the night before, everything turned out okay. I threw on clothes, shoved contacts in my eyes (again...not a good decision. Sorry, corneas!) and grabbed a Nature Valley Bar package for a breakfast to go. (I was pretty bummed because I REALLY wanted more of my pumpkin protein oats...they're awesome. Really. Check out this for the recipe:YUMMM
And my stomach was DEFINETELY rumbling by the time lunch rolled around 3 hours later. Note to self: even if in a hurry, grab something in addition to the granola bars. They don't have the staying power! Before a workout... yeah, but only because you eat AFTER it too. B-fast? No can do.

We were also informed of the school's new policies during each one of our 8 classes that day: you will lose credit for a class if you miss 12, you will lose points for being tardy 3 times, you need a swipe card to the bathrooms...blah blah blah.

Wait. A swipe card to the bathrooms?
Yup. It's real. Apparently, to handle any possible vandalism, this way the school can track who's been using the bathroom at different times to pinpoint the students behind it. Sounds like a good idea, except for MY concern.... what about if you lose the card and you just GOTTA GO? I think any one of you can see why this might be a slight worry... I have noticed that runners need to pee way more than the average person!

Practice was enjoyable. A 40 minute run at different speeds every 10 minutes. In the 100 degree weather. Which equals lots of sweat. And some really hot, thirsty teenage girls! To celebrate surviving, one of my friends and I headed to Starbucks and got some nice, cold drinks to refresh us. Like I said, it's okay to indulge yourself from time to time!

And that coffee frappacino was worth it.

Happy Banana Day! (Celebrate with a Smoothie!)

Did you know that today, August 27, is National Banana Day? Don't worry, I only discovered this recently, too. But bananas deserve some recognition, don't you agree? I mean, their versatility is praiseworthy! Banana 'Ice Cream'! A base for pudding! A link in vegan baking! An essential piece in the Elvis sandwich! A boat for every kind of sweet deliciousness!

Yeah. I love bananas.

Plus, as if it couldn't get any better, my XC team calls ourselves the bananas (although the high school mascot is the viking. Don't worry... no one could cheer 'MASH THOSE BANANASSS!' at our football games. Our football team needs no help...) We sing a little song before every meet which goes like this:

I AM A 'B-A-N-A-N-A' YES I AM.

It's a little silly, but I love it. No race is complete without the banana song, even if the challenging teams stare at us and try to spell out in their head to figure out what we're babbling about (we sing it pretty fast).

So...Bananas. Gotta love 'em.


I tried to make something with bananas today as a celebration, but the only thing I really made was not all that creative or original. It DID taste exceptional, however (imho), so I guess I'll share :) 


MY GO-TO SMOOTHIE (Chocolate Banana!)
1 Frozen Banana, Split in Half for easier blending
1/3-1/2 cup unsweetened almond milk
1/2 Scoop Chocolate Designer Whey Protein Powder

Do you really need instructions for this? Throw everything in the blender and have at it! Vary your milk content to get either a thicker or thinner smoothie, based on your taste. ENJOY! I like to eat mine with a spoon, because I just don't really like drinking smoothies...

First Practice of the Season

XC has finally begun! I am officially in season! Woo Hoo!

Well, I'm going to start off with some nice tips about running in honor of such a glorious day. Because the sun is shining, I've already done my workout, and I'm just feeling AWESOME. Do you ever get those days? Where everything is just, well... AWESOME. I'll say it again. That's how today is for me.

TODAY'S TIP: Pre-Workout Fuel
Let's be honest: this has us all a little puzzled sometimes. You want to eat enough so that you're not passing out with exhaustion at mile 2, but you don't want to feel like there's a rock in your stomach. (Or that you're about to throw up...) So what do you eat? Especially if you're in a time crunch, as I was this morning, rolling out of bed at 7:30 for a practice beginning at 8:00.

My tips:

  • No matter what, you need some carbohydrates.  If you can not scarf down anything else, JUST GET THE CARBS. Try and get a mix of just a few simple sugars, but you want more of your carbs to be complex. This will help sustain you over the miles. You want a few simple sugars, however, to give you available energy for bursts of speed or just to get going initially. Too much sugar, however, can upset your stomach or will be burned off more rapidly than you would wish, and you will start to feel sluggish later on.
  • Get some easily-digestible protein. Foods with lactose are NOT going to be your go-to's at this time, despite their easy to chug down nature and good protein content. I steer clear of the milk and yogurt before a run. Aim for something with a small amount of fat, also, as this helps it 'stick to your ribs' and allows you to absorb more of the available nutrition.
  • Drink something! Before you run, especially if it's in the morning, you need to be hydrated. Even 1 8oz glass of water can be enough for a 3 or 4 mile run. I find that if I don't drink something, I get achy, sweaty, and develop a huge headache. This 1 glass should not lead to any cramps as it is more for hydration purposes. DO NOT overhydrate (ie, chugging down a 20oz water bottle): this will only make you feel nauseated and will lead to cramps.
A Couple of Good Pre-Workout Snacks
  • 3 Fig Newtons and a small handful almonds
  • Packet of Nature Valley Bars
  • Banana (extra good because of the potassium) with 1 T. Peanut Butter on top of a slice of toast
  • Scrambled Egg in Half a tortilla
  • Trail Mix!
  • Dry Cereal with Coconut Flakes, Chocolate Chips, Craisins, and Nuts
  • Raw Veggies with Ranch Dip and Ritz Crackers
  • Graham Crackers with Nutella and PB
  • Protein Bar- Check the labels!
None of this was super revolutionary, I realize that, but I think it's a helpful tip from someone who has tried the whole gambit of running foods to optimize my performance. Which is NOT to say that I am a professional...diet wise or running wise. As you can see...

First 4F Challenge: a Healthy Coffee Coolatta

Breakfast today was a fail. I tried making some Overnight Oats last night, because my oatmeal obsession is still going strong, but they remained liquidy and kind of tasteless. I even tried adding some yogurt pre-overnighting and it didn't help. Anyone have any advice? Oh, well. You win some, you lose some. And since the oats lost, something else could win...


An awesome mix of strawberry Greek Yogurt and Delicious Kashi GoLean for protein, fiber, and staying power! (I also had an apple, because I love them, and some fruit seemed to be needed for this meal.)
Plus, the good thing is I am really lazy today could put my cereal straight in the yogurt cup and had NO CLEAN UP! After yesterday, I was in no mood to clean (though I could go for another cauliflower pizza today!)

So I mentioned in yesterday's post that I wanted to start another Foodie Blogger Challenge. THE 4F!

'Fast-Food Fantasy Friday' ('for foodies'. Maybe the 6F?) That's right. Take a favorite dish that you like to get out at a restaurant, preferably a fast food or at least a chain, and then remake it so it is more economical, healthful, and maybe, dare I say it? TASTIER. Try and post nutritional information and cost for both original and your versions for a comparison. And if you do take on this weekly challenge, please link back to me or at least post a little gadget thing (I'm working on designs!) Thanks to everyone!

I myself have a coffee weakness. I love the stuff black, but also in iced form with oodles of sugar and milk. Particularly Dunkin' Donuts "Coffee Coolatta" (although I wouldn't snub my nose at a Starbucks frappacino or a Peet's Blender either. Or a DQ moolatte... the list goes on on and on.)

It's an interesting story, actually. The idea for 4F came up a while ago, but I wasn't actually intending to make my submission when I was creating this marvelous little beastie. I wanted ice cream. I wanted Katie's Vanilla Frosty (seen here)
Well, I didn't have the tofu, so then I decided I was just going to change it to one of her ice creams. HA! Luck was against me again. Because I can be a little bit ditzy (and because I had no option- I have no ice cube tray. What is this madness?) I froze all the milk in a LARGE dixie cup. I took it out and I have this HUGE, 16 oz frozen milk cup. There was no way my little blender could handle that. So dutifully, I began to try and mutilate cut it into smaller cubes.Not really working out either. At last, it thawed enough that I was able to take the knife and 'shave' the whole thing. Like an icee or a slushie in consistency, if you will. And it probably took a good 25 minutes. But during that long stretch of time, it came to me. This milk-mistake was not meant to be ice cream- although that would have been lovely. It was meant to be my first 4F, forever something near and dear to my heart. It was meant to be...
DUNKIN' DONUTS COFFEE COOLATTA- 4F

ONLY 3 INGREDIENTS!
2 cups non-dairy milk (I used unsweetened almond)
2 packets instant Hazelnut Coffee, or any flavor variety for a variation
3-5 Packets Zero-Calorie Sweetener
In the mixin' bowl
  1. Freeze the nondairy milk. I DON'T recommend doing it all in one cup as I did, because the shaving will be hard. Try doing it in several small ice cube trays.
  2. After at LEAST 2 hours, or when frozen, take out your milk and 'shave it'. This can be done if you have one of those Italian Ice Shavers, or I bet you could use a food processor also. What I did was take a large, very sharp knife and kind of 'grate' the sides of the ice so it sort of peeled off. You could also do some chopping up if you chop it very fine. (Those chunks in my picture? Not good)
  3. Throw ice milk shavings in a bowl or large measuring cup (see Pyrex in background of picture). Do this as you go so that your ice shavings don't melt completely all over the place.
  4. Pour in instant coffee and sweetener to taste. Mix it all up and let it melt just the tiniest bit so there is a coffee brown liquid, and then stir again to re-coat everything. This gives it that optimal melty slushy thing that DD and the Bucks have going on.
DUNKIN DONUTS Small Coffee Coolatta: 350 calories, 22g fat, 40g carbohydrate (35g sugar), 10% DV Calcium, 3g protein. Cost: $2.75
Sarah's 4F Coffee Coolatta: 70 calories, 3g fat, 5g carbohydrate (4g sugar), 90% DV Calcium (I used the extra calcium almond milk.), 3 g protein. Cost: 80 cents

TASTE? AMAZINGLY COMPRABLE!!

So think about that next time you're considering whether or not you succeeded. No, you didn't meet your 7:30 split at the 5K. No, you had to walk that last mile because you thought your shins were going to give out on you. But metaphorically... you've traveled beyond your past limits, and THAT, my friends is success.

Quinoa, Quirks, and Quotes

The 3 Q's. Or at least my 3 current favorite ones.
-Quinoa: That little high protein grain/fruit that is just so CUTE. It's like a little ball with a tail on it. Which of course leads us to number two:
-Quirks: I'm full of them. I do some pretty random stuff. I'm a little OCD, and I periodically exclaim random things. Often these things are related to number three:
-Quotes: I just love them. They make great conversation starters and continuers. They can inspire you or bring tears to your eyes. It doesn't even really matter if they are cliche. They just brighten up our world!

So today, you get all three! YIPPEE!!! (rhyming... falls under category number two. Although often, related to category number three. Not too many words rhyme with quinoa, so I think we're safe on that front.)


Italian Veggie Quinoa 'Risotto'
1 Portabella Mushroom Cap, diced
1 Cup Cauliflower Florets, diced
1/2 Medium Zucchini, sliced into Coins
1 Tablespoon EVOO
2 Cups Vegetable Broth
1/2 Cup Quinoa
1/2 tsp. Basil
1/2 tsp Oregano
1/4 tsp california lemon peel, or lemon zest
Salt and pepper to taste
  1. In pan or wok, heat oil on medium high. Add mushroom, cauliflower, and zucchini. Cook until tender and soft. 
  2. Add quinoa and cook for 30-45 seconds to lightly toast it
  3. Add first cupful vegetable broth, about 1/2 cup at a time. Allow most of it to be absorbed by quinoa before adding second 1/2 cupful.
  4. Add last cup of vegetable broth and cover, reducing heat to low-medium. WALK AWAY and leave for at least 5 minutes. Go for 10 if you can bear the suspense (I couldn't).
  5. Stir it up and make sure all liquid is absorbed. Add spices. Serve and ENJOY!
COTTAGE CHEESE TOMATO CUPS
1 Medium Tomato- about 5 oz
1/4 cup low-fat cottage cheese
Black Pepper
Paprika
Dill
Onion Flakes
Italian Seasoning
1 tsp. Parmesan Cheese, or Nutritional Yeast for Vegans

1. Preheat oven to 250.
2. Cut circle in top of tomato to remove 'lid'- don't cut all the way down through the tomato, just most of the way so you can remove the core. Do your best to hollow it out, making enough room for cottage cheese mixture to go inside.
3. Combine remaining ingredients (all spices are a pinch unless otherwise noted, or to taste.) Using a spoon, stuff into hollowed out tomato.
4. Bake in shallow glass pan for 15-20 minutes, until tomato begins to get soft and cheese mixture gets a little 'oozy'. Serve and ENJOY (with quinoa, rice pilaf, or fluffy Italian bread and green salad.)

Now for the quirks. I noticed as I was writing this post that the tomato ingredients look like an hourglass. This pleased me to no end, for no particular reason whatsoever, except that it's cool. I just like random things, as I mentioned before. I'm a runner. As my XC coach would say, "It's all that oxygen debt catching up with your brain." And I wouldn't disagree with him. My team is crazy.

If you've never had the privilege of being on a XC team, let me just say: you missed out. My team in particular is the most awkward, fun-loving, supportive, kind, generous, silly, happy bunch of teenage girls on the planet. For instance, we did a scavenger hunt run/photo shoot (AKA a 'kodak run'). In every single picture we had to take, someone is doing something completely outrageous, just because that's how we are. Here's some examples:

And I've mentioned my little OCD-ishness before. Well, Pinterest drives me nuts every few weeks. I accumulate so many pinned recipes from all of my favorite blogs that I don't know what category to put them in and I have to create whole-new boards and rearrange EVERYTHING. It takes hours.

But you've probably stopped reading this post by now, since it's far too long. In fact, you just scrolled down to the recipe to see how to make some new food. Don't worry. I've done it, too. No hard feelings. After all, among my quirks: talking to myself randomly. Or singing. Or humming. Like Winnie the Pooh. (he's sooo CUTE. <-- #2)

My Dream Day: Long Runs and Cooking Stores

Well, as you've probably gathered from the title of this blog, I'm a runner. And it just occurred to me that I haven't talked about running AT ALL so far. That must be a record for me, considering I can barely take my rest days off, I'm so in love with it. Running is just awesome. And I'll tell you why.

Feel the wind at your back (or if you're slightly less lucky, at your front) blowing away all the cares and concerns that have been brewing throughout the day. Hear the dull thud of each step as you pound along the pavement in a beautiful, easy-to-find rhythm. Let your mind wander wherever it may, because right now, you are simply in touch with YOU. Every muscle, no... every CELL, every MITOCHONDRIA, every ATOM is alive and propelling you on to destiny.

I can be a bit melodramatic at times.

But I whole-heartedly believe in what I just wrote. Going for a run is one of the best gifts you can give to yourself on a daily basis. And it's FREE! (provided you don't get swept up in all the junk...heart monitors and calorie counters and fancy watches and shoes and shorts and shirts and leggings and compression socks and, well, the list goes on...)

So the best part of my day thus far was my run. Even though I got lost on it. Maybe ESPECIALLY because I got lost on it (that made it longer than planned.) You see, living in a tiny neighborhood, I don't have many options of where to go when I run. I must have covered the same route hundreds and hundreds of times, and as much as I love it, I've got to say.... it can be kind of boring.

Today I ventured off the beaten path, quite literally, by going to some newly-discovered trails that start a mile and a half from my house (part of why I've never been is just that... by the time I run to them, I usually need to turn back because in my busy, AP-class studded life, there isn't time for long runs). I glanced over the map posted at the start of the main trail and briefly considered taking a copy to go just in case...and then decided I was too cool for that. Ha. Serves me right.

I think I must have gone all over that network of trails today before finding the one that I wanted (I did remember the specific colors of where I needed to go. That gives me some credit, right?) and it took me at least 50 minutes. It was pure, exhausting bliss. I got scratched by thorns, my calves and thighs were screaming, I was getting a little bit anxious...but it was all worth it. I'd do it again. Except now it wouldn't be getting lost. It would just be having a long run.

Speaking of things I love, I got to go to the mall for Connecticut's tax-free shopping weekend. I went to a cooking supply store, and I must admit, I found a small haven there as well. If only I had unlimited access to all the funds I needed, then I would have gone on a MAJOR shopping spree. No joke. There were some really nifty gadgets I would like to try. Like this one:

Or the Yonanas (my friend has one and I adore it. I mean... healthy ice cream? What more could you want out of life? And it's totally delicious! I've tried the DIY version but it doesn't yield the same texture at all. Speaking of which, my food processor broke! I'm in mourning.)
And here is the wall of measuring gadgets, whisks, spatulas, timers, food scales, and everything in between. It was so TALL, and packed with different options. I wanted them all.
But, since I needed new school clothes, alas, no new kitchen gear for moi. That's okay. Christmas is only 4 months and 3 days away. But who's counting? (me! me! pick me!)

Time for a delicious recipe! I was trying to think of something creative that would embrace the good mood I was in today, so what better than a DESSERT? I know you're getting tired of all the berry posts, like the Summer Lovin' Salad and the Very Berry Pancakes, but hey, it's not my fault the fridge isn't working. And this one is different. It's DESSERT, for crying out loud.


TRIPLE BERRY BANANA BARS
4 servings Nilla Wafers, Crushed to Fine Powder (About 32 cookies)
4 Tablespoons Butter
2 Very Ripe Bananas, Sliced
1 Cup Ripe Strawberries, Sliced
12 oz. Red Raspberry Preserves
1 Cup Ripe Blueberries
1 Cup Flaked Coconut
1/2- 1 Cup White Chocolate Chips
1 Can Sweetened Condensed Milk
Extra Nilla Wafers for Crumbly Topping

Heat oven to 350 degrees. Crush Nilla Wafers by placing in large plastic bag and rolling over (closed) bag with rolling pin. Place butter in 9x13 pan and pop into the oven until all butter is melted. Swirl it around to coat all the pan evenly, and then pour in your nilla wafer crumbs. Coat all crumbs with butter and press firmly into pan. If you need more butter, USE IT! Evenly distribute sliced bananas and berries over crust. Drop preserves over everything by spoonfuls so they, too, are fairly evenly distributed. You don't need to spread them with a knife, however, they will even out more with baking. Sprinkle on coconut and desired amount of white chocolate chips. Pour sweetened condensed milk over whole thing, making sure that it too is poured EVENLY. Bake for 40 minutes or until milk is no longer gooey. Allow to cool and sprinkle with additional nilla wafer crumbs, or even chopped pecans if you like! ENJOY!
